Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring until sugar dissolves and mixture just begins to simmer. Remove from heat and cool to room temperature before using. Chill if not using immediately.
Soda Base
Prepare flavor concentrate
In a medium bowl or pitcher, combine the cooled simple syrup (1 cup), fresh lime juice (1/2 cup), orange extract (1/2 tsp), tamarind concentrate (2 tbsp), peach extract (1/4 tsp), grapefruit extract (1/4 tsp), and 1/8 tsp fine sea salt. Whisk thoroughly until homogeneous. Taste and adjust: add up to 1 tsp more simple syrup for sweetness, or an extra 1 tablespoon tamarind for more tartness.
Combine with carbonated water
Place 6 cups chilled carbonated water in a large pitcher. Slowly pour the flavor concentrate into the carbonated water while gently stirring with a long spoon to avoid losing carbonation. Stir only until evenly mixed (5–10 gentle strokes).
Bottling & Serving
Chill
Refrigerate the bottles upright for at least 2 hours to chill thoroughly and let flavors marry. For best carbonation retention, keep refrigerated and chilled until serving.
Storage & Shelf life
Keep sealed bottles refrigerated and consume within 5–7 days for best flavor and carbonation. If any off-odors or excessive bulging appear, discard immediately.
