Preparation Steps
Prepare the Filling
In a large bowl, combine the shredded chicken (or ground beef/pork), Mexican rice, and refried beans. Mix well until all ingredients are evenly distributed.
Assemble the Burritos
Warm the flour tortillas in a skillet or microwave until pliable. Place a generous amount of the filling mixture in the center of each tortilla, fold in the sides, and roll it up tightly from the bottom.
Add Enchilada Sauce and Cheese
Preheat your oven to 350°F (175°C). Place the rolled burritos in a baking dish seam side down. Pour enchilada sauce over the top and sprinkle with shredded cheddar cheese.
Bake
Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
Garnish and Serve
Remove from the oven and top with shredded lettuce, pico de gallo, and a dollop of sour cream before serving.
