Burrito Loco Preparation

Prepare the Ingredients

Slice the onions and bell peppers into strips. If using chicken, slice into bite-sized pieces. If using steak, slice against the grain.

Cook the Chicken or Steak

In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken or steak and season with salt and black pepper. Cook until browned and cooked through, about 6-8 minutes.

Sauté the Vegetables

Add the sliced onions and bell peppers to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.

Melt the Cheese

Sprinkle the American cheese over the cooked chicken and vegetables. Cover the skillet with a lid and let it sit for a couple of minutes until the cheese has melted.

Serve the Burrito Loco

Spoon the chicken or steak mixture onto a tortilla (if using). Drizzle with salsa verde and salsa roja. Serve with Mexican rice, refried beans, and a dollop of sour cream on the side.
