Prepare the Filling
In a large skillet, heat some oil over medium heat. Add the onion and bell pepper, sautéing until soft. Add garlic and sauté for another minute. Add crab, scallops, and fish, cooking until seafood is opaque. Stir in cilantro, season with salt and pepper to taste, and remove from heat.
Assemble the Burritos
Warm the tortillas slightly in a dry skillet or microwave. Place a portion of the seafood filling in the center of each tortilla. Fold in the sides and roll tightly to form burritos.
Prepare the Shrimp Topping
In the same skillet, add a bit more oil and cook the jumbo shrimp until pink and cooked through, about 3-4 minutes. Remove from heat.
Bake the Burritos
Preheat your oven to 350°F (175°C). Place the assembled burritos in a baking dish, top with salsa verde and sprinkle with shredded white cheddar cheese. Bake for 15-20 minutes until cheese is melted and bubbly.
Serve
Serve the burritos with Mexican rice, refried beans, and a dollop of sour cream on the side.
