Prepare beef

In a small bowl combine all Beef Taco Seasoning ingredients (chili powder, ground cumin, smoked paprika, onion powder, garlic powder, dried oregano, brown sugar). Heat a large skillet over medium-high heat and add 1 tbsp vegetable oil. Add the ground beef, break up with a spatula, and cook 5–7 minutes until browned. Sprinkle 2 tsp salt and 1 tsp black pepper over the beef, then add half the seasoning blend and stir. Reduce heat to medium, add 1/2 cup water, cover and simmer 5 minutes, then uncover and cook until liquid reduces and beef is saucy. Taste and adjust seasoning, add remaining seasoning if desired. Keep warm in a covered pan or transfer to a slow cooker on low.

Marinate and cook chicken

Place chicken thighs in a shallow dish or resealable bag. In a bowl whisk lime juice (from Chicken Marinade), 3 tbsp olive oil, minced chipotle, 1 tsp ground cumin, 1 tsp paprika and minced garlic. Pour marinade over chicken, toss to coat, and refrigerate 20–30 minutes (up to 2 hours). Heat 1 tbsp vegetable oil in a skillet or preheat a grill to medium-high. Remove excess marinade and cook chicken 5–7 minutes per side (internal temperature 165°F / 74°C). Let rest 5 minutes, then slice or shred. Keep warm.

Prepare black beans

Warm a small saucepan over medium heat with 1 tbsp olive oil. Add drained black beans, 1/4 tsp salt, a pinch of black pepper and 2–3 tbsp water. Cook, stirring, 3–4 minutes until heated through and slightly saucy. Mash lightly with the back of a spoon if desired for a refried-style texture. Keep warm.

Salsas & Sauces

If not using store-bought, make pico de gallo by combining 3 cups chopped ripe tomatoes, 3/4 cup diced white onion, 1 cup chopped cilantro, 1–2 tbsp lime juice, 1/2 tsp salt and 1 chopped jalapeño. Stir and refrigerate until serving. For roasted tomatillo salsa, roast tomatillos, jalapeño and onion under a broiler or on a hot pan until charred, then blend with cilantro, lime juice and salt until smooth. Arrange crema, hot sauce and salsas in bowls on the serving table.

Toppings & Fixings

Prepare and arrange toppings: shred cheese, thinly shred cabbage, dice onions, chop cilantro, slice jalapeños, portion pickled red onions and cut lime wedges. Place each topping in a shallow bowl or tray with spoons or tongs so guests can assemble their tacos.

Tortillas & Serving

Warm tortillas shortly before serving. For corn tortillas: heat a dry skillet over medium-high and warm each tortilla 20–30 seconds per side, stacking them in a towel to keep warm. For flour tortillas: wrap stacks in foil and warm in a 300°F (150°C) oven for 8–10 minutes. Arrange tortillas in baskets or on heated trays. Set out serving utensils, small plates, napkins, and labels for each protein and salsa so guests can build tacos.

Assembly & Service

Set up the taco bar line: tortillas first, then proteins (beef, chicken, black beans), then salsas, cheeses, vegetables and garnishes. Recommend a build: warm tortilla, 2–3 oz protein (about 56–85 g), a spoonful of beans if desired, pico or salsa, shredded cabbage, cheese, a squeeze of lime and crema. Provide tongs and spoons for each item and replace refills as needed.

Safety and timing: keep hot items above 140°F (60°C) on warmers or in slow cookers. Keep cold items on ice or refrigerated until serving. Plan to replenish proteins and toppings every 60–90 minutes for a long event.
