Clean & Arrange Glassware
Wash and dry all glassware. Arrange coupe/martini glasses chilled in the refrigerator or ice well if serving straight-up margaritas. Place rocks glasses on a central mat with 1–2 per expected guest at a time. Keep shot glasses near the jigger for quick measuring.
Set out small bowls or a tray with garnish options (lime wedges, dehydrated slices, jalapeño and cilantro) so bartenders can assemble drinks quickly.

Rim the Glass
Take a coupe or rocks glass and moisten the rim with a lime wedge. Dip the rim into the desired rim mix (salt, tajin, or sugar). Set the glass aside.
Build the Cocktail
In a shaker with ice, combine 45 ml blanco tequila, 22.5 ml triple sec (Cointreau), 30 ml fresh lime juice and 15 ml simple syrup (or 10 ml agave for a less sweet option). Shake vigorously for 10–15 seconds until well-chilled.

Spicy Margarita
Muddle 2–3 jalapeño slices in the shaker (remove seeds for milder heat), then add 45 ml tequila, 22.5 ml triple sec, 30 ml lime juice and 15 ml simple syrup. Shake with ice, strain into a tajin-rimmed rocks glass over ice, and garnish with a jalapeño slice.
Smoky Mezcal Option
Substitute 30–45 ml mezcal for a portion or all of the tequila (e.g., 30 ml mezcal + 15 ml blanco tequila). Combine with triple sec and lime juice as above, shake with ice, strain, and garnish with a dehydrated citrus wheel.
Skinny Margarita
Use 45 ml tequila, 22.5 ml triple sec (or skip and use a dash of orange bitters), 30 ml lime juice and 7.5–10 ml agave. Shake and strain over ice. No sugary rim.
Margarita Spritz
Build 45 ml tequila, 15 ml triple sec, 20 ml lime juice and 10 ml simple syrup in a glass with ice. Top with 60–90 ml club soda, stir gently, and garnish with an orange slice.
