Prepare produce

Halve the avocados, remove pits and scoop flesh into a medium mixing bowl. Finely dice the red onion and tomato, seed and finely mince the jalapeño (leave some seeds if you want extra heat), mince the garlic, and finely chop the cilantro and green onion.

Mash avocados

Using a fork or potato masher, gently mash the avocado to your desired texture — leave it a bit chunky for a classic happy hour guac or mash smoother if preferred.

Combine ingredients

Add the lime juice, diced red onion, diced tomato, minced jalapeño, minced garlic, chopped cilantro, ground cumin, kosher salt, black pepper, and crushed red pepper flakes (if using) to the mashed avocado. Drizzle in the extra-virgin olive oil.

Mix and adjust seasoning

Fold everything together with a spatula or spoon until evenly combined. Taste and adjust: add more salt, lime juice, or jalapeño to reach your preferred balance of acidity, saltiness and heat.

Finish and garnish

Transfer guacamole to a serving bowl, sprinkle chopped green onion over the top, and serve immediately with lime wedges and tortilla chips. If you need to hold it for a short while, press plastic wrap directly onto the surface of the guacamole to limit browning and refrigerate until ready to serve (up to 2 hours).
