Prepare equipment: fit a large heavy-bottomed saucepan with a heatproof spatula, line a baking sheet with parchment, and have a large bowl ready. Fit a pastry bag with a 1/2-inch open star tip (or large closed star).

Combine liquids and fat: in the saucepan, combine 1 cup water, 1/2 cup whole milk, 6 tbs unsalted butter, 1 tbsp granulated sugar, and 1/2 tsp fine sea salt. Bring to a vigorous simmer over medium heat, stirring until butter melts and mixture is hot.

Add flour: remove the pan from heat all at once and immediately add 1 1/4 cups all-purpose flour. Stir vigorously with the spatula until the mixture forms a smooth, cohesive dough and pulls away from the sides (about 30–45 seconds).

Cool slightly and add eggs: let dough cool 3–4 minutes (warm but not steaming). Add 3 large eggs one at a time, fully incorporating each egg before adding the next. The dough should be glossy and pipeable; if it looks too stiff, add the third egg in two halves and incorporate.

Heat oil: while dough cools, pour about 6 cups neutral oil into a heavy pot to a depth of 2–3 inches. Heat over medium to medium-high until oil registers 350°F (175°C) on a thermometer, or a small bite of choux dropped into oil bubbles and rises steadily.

Pipe and cut: transfer dough to the pastry bag. Pipe 4–5 inch lengths directly over prepared baking sheet (if making ahead) or into the hot oil using scissors to cut the dough at the tip; keep lengths consistent so they cook evenly. Fry in batches, do not overcrowd (3–5 at a time depending on pot size).

Fry churros: fry until deep golden and crisp, about 2–3 minutes per side, turning with tongs or a spider. Adjust heat to maintain 325–350°F (160–175°C). Remove to a wire rack set over a baking sheet to drain briefly.

Coat with butter and cinnamon sugar: while churros are hot, brush or toss with 4 tbs melted butter, then immediately coat in a bowl with 1 cup granulated sugar mixed with 2 tsp ground cinnamon. Place coated churros on trays for passing.

Keep warm for service: hold in a 200°F (95°C) oven on wire racks for up to 30 minutes for service; for longer holding, refresh by returning to 350°F oil for 15–30 seconds and recoat quickly.

Chocolate Dipping Sauce

Warm cream: place 3 tbsp heavy cream in a small saucepan over low heat until it just begins to steam (do not boil) or microwave until hot, about 20–30 seconds.

Melt chocolate: put 8 oz chopped bittersweet chocolate in a heatproof bowl. Pour warm cream over chocolate, add 1 tsp light corn syrup (or honey) and let sit 1 minute. Stir gently until smooth and glossy. Stir in 1/2 tsp vanilla and 1/8 tsp sea salt. Transfer to a small serving bowl and keep warm over a double boiler or insulated container for service.

Dulce de Leche Drizzle

Loosen dulce de leche: spoon 3 tbs dulce de leche into a small bowl, stir in 1 tsp heavy cream to achieve a pourable consistency. Warm gently in a microwave for 10–15 seconds if needed. Transfer to a squeeze bottle or small bowl for drizzling.

Berry & Mascarpone Dip

Prepare mascarpone dip: in a bowl, combine 8 oz mascarpone, 3 tbs powdered sugar, and 1/2 tsp vanilla extract. Whisk until smooth and spreadable.

Fold in berries: gently fold in 1 cup fresh mixed berries and 1/2 tsp lemon zest, reserving a few berries for garnish. Transfer to a small serving bowl and chill briefly until service.

Dessert Tray Assembly & Service

Arrange components: on a large platter or several passed trays, arrange warm churros in small clusters. Place bowls of chocolate sauce, dulce de leche drizzle, and mascarpone berry dip spaced for easy access.

Add add-ons: tuck mini brownie bites, chopped nuts, caramel popcorn, and fresh fruit slices around the churros to add texture and variety. Provide small skewers or toothpicks for picking items.

Label and time: label dipping bowls (e.g., chocolate, dulce de leche, mascarpone & berries). Note that churros are best within 30–45 minutes of frying for optimal crispness; refresh briefly if necessary during a long event.
