    Chop the Vegetables

    Wash and chop the carrots, bell peppers, broccoli, zucchini, and red onion into bite-sized pieces. Halve the cherry tomatoes and mince the garlic cloves.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Harder Vegetables

    Add the chopped carrots and red onion to the skillet. Sauté for about 5 minutes, stirring occasionally, until they begin to soften.

    Add Remaining Vegetables

    Add the bell peppers, broccoli, zucchini, and cherry tomatoes to the skillet. Season with salt, black pepper, and dried Italian herbs. Continue to sauté for another 5-7 minutes until all vegetables are tender but still crisp.

    Serve

    Remove from heat and serve warm as a side dish or over cooked grains for a main dish.
