Marinating the Steak

    Prepare the Marinade

    In a medium bowl, whisk together olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper.

    Marinate the Steak

    Place the flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours.

Preparing the Vegetables

    Slice the Vegetables

    While the steak is marinating, slice the bell peppers and onion into thin strips.

Cooking the Steak and Vegetables

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 5-7 minutes on each side for medium-rare, or to your desired doneness. Remove from the heat and let it rest for 5 minutes.

    In the same skillet or on the grill, add a little olive oil if needed, and add the sliced onions and bell peppers. Sauté for about 5-7 minutes until they are tender and slightly charred.

    Once the steak has rested, slice it against the grain into thin strips.

    Warm the flour tortillas in a skillet or microwave. To serve, fill each tortilla with sliced steak, sautéed onions, and peppers. Top with sour cream, guacamole, and chopped cilantro. Serve with lime wedges on the side.
