Quesadilla Preparation

    Prepare the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper, onion, and zucchini. Season with salt and black pepper. Sauté the vegetables for about 5-7 minutes until they are tender. Remove from heat and set aside.

    Assemble the Quesadilla

    Heat a clean skillet over medium heat. Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheddar cheese evenly over it. Add a portion of the sautéed vegetables on top of the cheese, then sprinkle another 1/2 cup of cheese over the vegetables. Place a second tortilla on top.

    Cook the Quesadilla

    Cook the quesadilla for about 3-5 minutes on one side until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a spatula and cook for another 3-5 minutes on the other side. Once both sides are golden and the cheese is fully melted, remove from the skillet and cut into wedges.

    Prepare the Beans

    In a saucepan, combine the canned black beans (drained and rinsed), cumin, garlic powder, salt, and water. Bring to a simmer over medium heat, stirring occasionally. Let it cook for about 10 minutes until heated through and flavors meld. If the beans become too thick, add a little more water to reach desired consistency.
