Preparation of Fish

    Season the Fish

    Pat the salmon or tuna dry with paper towels. Season both sides with salt, black pepper, and lemon juice.

    Heat the Pan

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

    Sear the Fish

    Carefully place the seasoned fish in the hot skillet. Cook for 4-5 minutes on one side until golden brown and crispy. Flip and cook for another 3-4 minutes on the other side, or until it reaches your desired doneness.

Preparation of Vegetables

    Chop Vegetables

    While the fish is cooking, chop the asparagus into 2-inch pieces, slice the carrots into thin rounds, and cut the bell pepper into strips.

    Cook Vegetables

    In another pan, heat 1 tablespoon of olive oil over medium heat. Add the garlic cloves (minced) and sauté for 30 seconds until fragrant.

    Add the chopped asparagus, carrots, and bell pepper to the pan. Season with salt and black pepper. Stir-fry the vegetables for about 5-7 minutes until tender-crisp.
