Tamale Dough

Mix Dry Ingredients
In a large mixing bowl, combine masa harina, baking powder, and salt. Mix well.

Mix Shortening with Dry Ingredients
In a separate bowl, beat vegetable shortening until fluffy. Gradually add the dry ingredient mixture.

Add Broth to Dough
Slowly add chicken or vegetable broth while mixing until the dough is soft and pliable.
Filling

Prepare Filling
In a bowl, combine cooked shredded chicken, diced green chilies, chopped cilantro, salt, and ground cumin. Mix until well combined.
Assemble Tamales

Soak Corn Husks
Soak corn husks in warm water for at least 30 minutes to soften them.

Spread Dough on Husk
Take a soaked corn husk and spread about 1/4 cup of tamale dough onto the center of the husk.

Add Filling
Add about 2 tablespoons of the filling on top of the dough.

Fold Tamale
Fold the sides of the husk over the dough and filling, then fold up the bottom to secure.
Cook Tamales

Prepare Steamer
Place a steamer basket in a large pot and fill the bottom with water. Bring to a simmer.

Steam Tamales
Arrange the tamales upright in the steamer basket and cover with a damp cloth. Steam for about 1 to 1.5 hours.
