Method

Prepare Enchilada Filling

    Cook the Beef

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

    Add Vegetables

    Add the chopped onion and minced garlic to the skillet. Cook for an additional 3-4 minutes until the onion is translucent.

    Season the Filling

    Stir in the chili powder, cumin, and salt. Mix well to combine and remove from heat.

Prepare Enchilada Sauce

    Combine Ingredients

    In a medium saucepan, combine the tomato sauce, water, chili powder, garlic powder, onion powder, and salt.

    Simmer the Sauce

    Bring the mixture to a simmer over medium heat, stirring occasionally for about 5-7 minutes. Remove from heat.

Assemble Enchiladas

    Fill Tortillas

    Preheat your oven to 350°F (175°C). Take a corn tortilla and add a generous spoonful of the beef filling and a sprinkle of cheese. Roll the tortilla tightly and place it seam-side down in a baking dish.

    Add Sauce

    Repeat with the remaining tortillas and filling, placing them in the baking dish. Pour the enchilada sauce over the rolled tortillas and top with the remaining cheese.

    Bake

    Cover the baking dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

Prepare Pico de Gallo

    Combine Ingredients

    In a bowl, combine the diced tomatoes, finely chopped onion, chopped cilantro, lime juice, and salt to taste. Mix well and set aside.

Serve

    Plate the Dish

    Once the enchiladas are done baking, garnish with pico de gallo and fresh pitted cherries on the side.
