Prepare the Dough

Activate the Yeast
In a small bowl, mix warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let it Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Shape the Dough
Once the dough has risen, punch it down and roll it out into a large circle or rectangle, depending on your baking dish.

Add Toppings
Place the rolled-out dough onto a greased baking sheet. Spread the cooked chorizo mixture evenly on top, then sprinkle with crumbled cotija cheese.

Bake in the preheated oven for about 15-20 minutes, or until the crust is golden brown and the cheese is slightly melted.

Remove from the oven, garnish with chopped cilantro, and serve with lime wedges on the side.
