Method

Prepare the Dough

  1. 1

    Activate the Yeast

In a small bowl, mix warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Make the Dough

In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    Let it Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Prepare the Chorizo Topping

  1. 5

    Cook the Chorizo

In a skillet over medium heat, add olive oil and diced onion. Sauté for about 3-4 minutes until onion is translucent.

  2. 6

    Add Garlic and Chorizo

Add minced garlic and ground chorizo to the skillet. Cook for about 5-7 minutes until the chorizo is browned and cooked through. Remove from heat.

Assemble and Bake

  1. 7

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 8

    Shape the Dough

Once the dough has risen, punch it down and roll it out into a large circle or rectangle, depending on your baking dish.

  3. 9

    Add Toppings

Place the rolled-out dough onto a greased baking sheet. Spread the cooked chorizo mixture evenly on top, then sprinkle with crumbled cotija cheese.

  4. 10

    Bake

Bake in the preheated oven for about 15-20 minutes, or until the crust is golden brown and the cheese is slightly melted.

  5. 11

    Garnish and Serve

Remove from the oven, garnish with chopped cilantro, and serve with lime wedges on the side.
