Prepare the Blackening Seasoning
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well and set aside.

Prepare the Vegetables
Slice the bell peppers and onion into thin strips. Set aside for later use.

Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap garlic cloves in aluminum foil with a drizzle of olive oil and roast in the oven for 20-25 minutes until soft.
Cooking the Fish

Blacken the Fish
Pat the red fish fillets dry with paper towels. Rub the blackening seasoning generously over both sides of the fillets.

Sear the Fish
Heat a skillet over medium-high heat and add a tablespoon of oil. Once hot, add the fish fillets and sear for 3-4 minutes on each side until blackened and cooked through. Remove from the skillet and let rest.
Making the Sauce

Prepare the Roasted Garlic Butter Cream Sauce
Once the garlic is roasted, squeeze the cloves out of their skins into a saucepan. Add butter and heat over medium, stirring until melted. Add heavy cream, lemon juice, salt, and pepper. Simmer for 5-7 minutes until slightly thickened.
Assembling the Fajitas

Prepare the Tortillas
Warm the flour or corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until soft and pliable.

On a serving plate, place a bed of cooked rice. Top with blackened fish, sautéed bell peppers, and onions. Drizzle generously with roasted garlic butter cream sauce and garnish with fresh cilantro.
