Beans Preparation

Prepare the Beans
Rinse the dried beans under cold water to remove any impurities. Place the beans in a large pot.

Soak the Beans
Add 4 cups of water to the pot with the beans. Allow the beans to soak overnight, or for at least 8 hours.

Cook the Beans
After soaking, drain the beans and add them back to the pot with fresh water. Bring to a boil over medium heat, then reduce to low and simmer for about 1 to 1.5 hours, or until the beans are tender. Add salt to taste during the last 10 minutes of cooking.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Incorporate Zucchini and Spinach
Add the diced zucchini and fresh spinach to the skillet. Cook until the spinach wilts, about 3-4 minutes.

Season the Vegetables
Sprinkle black pepper and cumin over the vegetables and stir well to combine. Cook for an additional 2 minutes to allow the flavors to meld.
Combine and Serve

Combine Beans and Vegetables
Once the beans are cooked and tender, drain any excess water and add them to the skillet with the sautéed vegetables. Stir well to mix everything together.

Taste and adjust seasoning if necessary. Serve warm as a side dish or main course.
