Preparation of Ingredients

    Prepare the Shrimp

    Peel and devein the shrimp. Rinse under cold water and pat dry with paper towels.

    Chop the Vegetables

    Slice the carrots into thin rounds, chop the mushrooms, and slice the zucchini into half-moons. Finely chop the jalapeño, removing the seeds for less heat if desired.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the carrots, mushrooms, and zucchini, and sauté for about 5-7 minutes until they are tender.

    Cook the Shrimp

    Push the vegetables to the side of the skillet and add the shrimp. Season with salt and black pepper. Cook for about 3-4 minutes until the shrimp turn pink and are cooked through.

    Make the Sauce

    In the same skillet, add the agave nectar, heavy cream, and butter. Stir to combine and let it simmer for about 2-3 minutes until the sauce thickens slightly. Add the chopped jalapeño and stir well.

    Mix the shrimp and vegetables with the sauce until everything is well coated. Serve the agave nectar shrimp over a bed of the sautéed vegetables.
