Rib Preparation
Agave Chipotle Glaze
Method
Rib Preparation
- 1
Prepare the Ribs
Start by removing the silver skin from the back of the ribs. This will help the marinade penetrate better.
- 2
Season the Ribs
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper. Rub this mixture all over the ribs, ensuring they are evenly coated.
- 3
Marinate the Ribs
Place the seasoned ribs in a large resealable plastic bag or a covered dish. Refrigerate for at least 24 hours to allow the flavors to meld.
Agave Chipotle Glaze
- 4
Make the Glaze
In a medium saucepan over medium heat, combine the agave nectar, chipotle peppers (finely chopped), soy sauce, apple cider vinegar, honey, Dijon mustard, lime juice, Worcestershire sauce, ground cumin, and ground cinnamon. Stir well.
- 5
Simmer the Glaze
Bring the mixture to a simmer and let it cook for 10-15 minutes until it thickens slightly. Remove from heat and stir in the chopped cilantro.
Cooking the Ribs
- 6
Slow Cook the Ribs
Preheat your oven to 300°F (150°C). Place the marinated ribs on a baking sheet lined with aluminum foil. Cover tightly with another piece of foil.
- 7
Bake the Ribs
Bake the ribs in the preheated oven for 2.5 to 3 hours, or until tender. Remove the ribs from the oven and discard the top layer of foil.
- 8
Glaze and Broil
Brush the agave chipotle glaze generously over the ribs. Place the ribs under the broiler for 5-7 minutes until the glaze caramelizes and becomes sticky. Keep a close eye to prevent burning.
