Prepare the Chicken
Pound the chicken breasts to an even thickness, about 1/2 inch. Season both sides with salt and black pepper.

Set Up Breading Station
Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess, then dip in the beaten eggs, and finally coat with panko breadcrumbs, pressing lightly to adhere.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken breasts and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Serve
Slice the chicken katsu and serve hot with kim chee fried rice on the side.
