Prepare Meats
Cook bacon
If using thick-cut applewood bacon, heat a large skillet over medium heat. Add bacon in a single layer and cook 4–6 minutes per side, flipping occasionally, until browned and crisp to your preference. Transfer to a paper towel–lined plate and keep warm in a low oven (about 200°F / 95°C) if desired.
Cook pork or turkey sausage links/patties
If using pork or turkey sausage links or patties: heat 1 teaspoon neutral oil in the same skillet over medium heat (use a little oil if pan is dry). Add sausage links or patties without crowding. For links: cook 10–12 minutes, turning every 2–3 minutes, until evenly browned and internal temperature reaches 160°F (71°C) for pork or 165°F (74°C) for turkey. For patties: cook 4–6 minutes per side until browned and cooked through. Transfer to the plate with bacon and keep warm.
Cook Eggs
Beat eggs
Crack 3 large eggs into a bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Whisk until combined and slightly frothy—this yields fluffy scrambled eggs. (If you prefer fried or poached eggs, skip to the alternative note below.)
Scramble gently
Wipe the skillet clean if it has excess fat, leaving a little bacon/sausage fat for flavor if desired. Add 1 tablespoon unsalted butter and melt over medium-low heat until foaming but not browned. Pour the beaten eggs into the skillet. Let the eggs sit undisturbed for 10–15 seconds, then gently push the set edges toward the center with a silicone spatula, tilting the pan as needed to let uncooked egg flow to the edges. Continue folding every 10–15 seconds until eggs are mostly set but still slightly glossy — about 2–3 minutes total for soft scrambled eggs. Remove from heat just before fully set; residual heat will finish them.
Season and finish
Taste and adjust seasoning if needed. Sprinkle chopped chives or parsley if using. If you prefer fried eggs, heat 1 teaspoon butter or oil in the skillet over medium, crack each egg into the pan, cook until whites are set and edges crisp (about 2–3 minutes) for sunny-side up or flip for over-easy (additional 20–30 seconds). For poached eggs, bring a shallow pan of water with 1 tablespoon vinegar to a gentle simmer and poach 3 eggs for about 3 minutes for runny yolks.
To Assemble and Serve
Arrange the three eggs (scrambled, fried, or poached) on a warm plate. Add chosen meat(s) alongside: 2 sausage links or patties, 3 slices of thick-cut bacon, and/or 3 slices of warmed ham. If using more than one meat option, distribute portions so total plate equals the chosen servings.
