Room temperature eggs

If you have time, remove the eggs from the refrigerator 10–15 minutes before cooking so they approach room temperature; this helps them cook more evenly. Mince chives if using and set aside.

Measure milk/half‑and‑half, butter and set accompaniments ready if using.

Cook the eggs

Crack and whisk

Crack the three cage‑free eggs into a medium bowl. Add the milk (1 tablespoon) and 1/4 teaspoon of the salt. Whisk vigorously until yolks and whites are completely combined and slightly frothy, about 20–30 seconds. Whisking incorporates air for a fluffier texture.

Heat the pan

Place a nonstick or well‑seasoned 8–10 inch skillet over medium‑low heat. Add the butter and let it melt gently until it foams and the milk solids begin to turn opaque but not brown, about 30–45 seconds.

Cook the eggs

Pour the whisked eggs into the skillet. Allow them to sit undisturbed for 10–15 seconds until the edges begin to set. Using a silicone spatula, push the set edges toward the center, tilting the pan to let uncooked egg flow to the edges. Continue gentle folding and pushing in 10–20 second intervals until the eggs are mostly set but still moist and slightly glossy — total cooking time about 2–3 minutes depending on stove and pan.

Finish & season

Remove the pan from heat when the eggs are just about done (they will continue to cook from residual heat). Season with the remaining 3/4 teaspoon salt and the freshly ground black pepper to taste (about 1 teaspoon). Gently fold in the minced chives if using.

Toast & serve (optional)

If serving with bread: brush the slice lightly with olive oil and toast in a separate skillet over medium heat 1–2 minutes per side until golden, or use a toaster. Transfer the eggs onto the toast or onto a warm plate beside the toast.
