Method
Classic Irish Coffee (single serving)
Add sugar and whiskey
Place 1 tablespoon packed brown sugar into the warmed glass. Pour in 1.5 oz Irish whiskey.
Add coffee and dissolve sugar
Pour 6 oz hot strong brewed coffee into the glass. Stir vigorously for 10–15 seconds until the brown sugar is fully dissolved and the mixture is uniformly sweetened.
Whip the cream
Lightly whip 2 tablespoons heavy cream until it thickens slightly but remains pourable (soft ribbon when drizzled). Do not over-whip; it should still flow off a spoon to form a layer.
Float cream on top
Hold a spoon upside down just above the coffee surface and slowly pour the lightly whipped cream over the back of the spoon so it floats as a distinct layer atop the coffee. Aim for a 1/4–1/2 inch cream layer.
Garnish and serve
Optionally garnish with a few coffee beans or a light dusting of grated nutmeg. Serve hot without stirring so the drinker sips coffee through the cream.
Batch/Party Irish Coffee (6 servings)
Preheat server and cups
Warm a large heatproof pitcher or thermos and six heatproof glasses by rinsing with very hot water; discard the water and keep the containers warm.
Combine sugar and whiskey
In the warmed pitcher, add 6 tablespoons packed brown sugar and 9 oz Irish whiskey. Stir briefly to begin dissolving the sugar.
Add coffee and dissolve
Pour 36 oz hot strong brewed coffee into the pitcher. Stir for 20–30 seconds until the sugar is completely dissolved and the mixture is homogeneous.
Lightly whip cream
Lightly whip 12 tablespoons heavy cream (about 3/4 cup) until it thickens but remains pourable. Use a whisk, fork, or hand mixer on low and stop when the cream holds a soft ribbon but will still flow.
Portion and float cream
Ladle or pour the hot coffee mixture into each warmed glass, leaving room at the top. Using a spoon held upside down, gently pour about 2 tablespoons of lightly whipped cream onto each serving so it floats as a separate layer.
Garnish and serve
Optional: garnish each drink with a couple of coffee beans or a light dusting of grated nutmeg. Serve immediately and instruct guests to drink without stirring, sipping the hot coffee through the cream.
