Prepare strawberries
Rinse 1 cup of strawberries under cold water, pat dry, remove the green tops, and quarter (or halve if small). Place in a large mixing bowl.
Prepare blueberries
Rinse 1 cup of blueberries and drain well. Add to the bowl with strawberries.
Prepare grapes
Rinse 1 cup of green grapes, pat dry, and halve each grape if they are large. Add to the bowl.
Prepare pineapple
Peel, core and dice fresh pineapple to make 1 cup. If using pre-cut pineapple, drain any excess juice and add to the bowl.
Prepare kiwi
Peel and slice kiwis to yield 1 cup. Add to the bowl.
Prepare mango
Peel and dice mangoes to yield 1 cup. Add to the bowl.
Gently toss all fruit in the bowl to combine, taking care not to crush softer berries. Set aside while you make the dressing (optional).
Optional Dressing & Garnish
Make dressing
In a small bowl, whisk together 2 tablespoons fresh lime juice and 1 tablespoon honey or maple syrup until the honey is dissolved and the mixture is smooth.
Season
Stir in a pinch of sea salt to enhance fruit flavors.
Finish salad
Pour the dressing over the tossed fruit and gently fold until fruit is lightly coated. Taste and adjust sweetness or lime as desired.
Garnish
Sprinkle 2 teaspoons chopped fresh mint over the top and serve immediately or chill for up to 2 hours in the refrigerator. If chilling, wait to add mint until just before serving.
