Prepare bacon
Cook the bacon until crisp. For stovetop: place bacon in a cold skillet in a single layer, cook over medium heat, flipping occasionally, about 8–12 minutes until crisp. For oven: lay bacon on a rimmed baking sheet lined with foil and bake at 400°F (200°C) for 12–18 minutes until crisp. Transfer to a paper towel-lined plate to drain.
Prepare avocado
While the bacon cooks, halve and pit the avocado. Scoop out the flesh from half an avocado into a small bowl. Add the lime juice, mayonnaise, kosher salt, and black pepper. Mash with a fork until spreadable but slightly chunky. If using hot sauce, stir it in now. Taste and adjust salt or lime.
Toast bread and melt cheese
Butter one side of each bread slice with the unsalted butter. Heat a clean skillet over medium-low heat. Place the bread butter-side-down in the skillet. Lay the pepper jack slice on one piece of bread (butter-side-down) so it will melt against the heat. Toast until golden and the cheese begins to soften, about 1–2 minutes; press lightly with a spatula. Remove from heat.
Assemble sandwich
Flip the cheese-topped slice so the melted-cheese side faces up. Spread the mashed avocado evenly on the other slice (the non-cheese slice). Top the avocado with the hot, crisp bacon slices in an even layer. Place the cheese-topped bread slice on top, butter-side-up, to form the sandwich.
Finish and serve
Return the assembled sandwich to the warm skillet and cook over low heat for 30–60 seconds per side, pressing gently, just until the bread is golden and the cheese is fully melted. Remove to a cutting board, let rest 1 minute, then slice in half. Serve immediately.
