Toast bread
Preheat a toaster or oven broiler. Brush both sides of the 2 thick-cut 9-grain slices lightly with 1 tbs extra-virgin olive oil. Toast until golden and crisp, about 3–5 minutes in a toaster or 4–6 minutes under a broiler, flipping once if needed. Remove and set aside on a rack so the bottoms stay crisp.

Preheat oven to 400°F (200°C) or use a hot skillet. Halve (if large) or leave cherry/grape tomatoes whole. Toss 12 tomatoes with 1 tbs extra-virgin olive oil, 1/4 tsp sea salt and 1/4 tsp black pepper. Spread on a small baking sheet and roast 10–15 minutes until skins blister and tomatoes soften. If using a skillet, cook over medium-high heat 6–8 minutes until blistered. Remove and keep warm.

Dress greens
Toss 1 cup organic mixed greens with 1/2 tbs extra-virgin olive oil and a light pinch of sea salt if desired. Arrange greens on the serving plate where the toasts will sit or place neatly next to the toasts.
Assemble base
Spread an even layer of the mashed avocado onto each toasted bread slice, dividing the mixture between the two slices. Top each with a portion of the roasted tomatoes, arranging them attractively.
Finish with seeds and glaze
Sprinkle 1/2 tsp toasted sesame seeds evenly over both toasts. Drizzle 1 tbs balsamic glaze across the top in a light zigzag or dots.

Cook sunny-side-up eggs
Heat a nonstick skillet over medium-low and add 1 tsp butter or olive oil. Crack 2 cage-free eggs into the pan, spacing them so they don't touch. Cook gently until whites are set but yolks remain runny, about 3–4 minutes. If needed, cover the pan for 30–45 seconds to set the tops of the whites while keeping yolks runny. Season each egg with 1/8 tsp sea salt and a light grind of black pepper.
