Method
Fried Chicken
Marinate
Trim any excess fat from the chicken thighs and lightly score the skin. In a bowl, combine the buttermilk and 1 tablespoon hot sauce. Submerge the chicken in the mixture, cover, and refrigerate for at least 1 hour (up to 4 hours) to tenderize and add flavor.
Heat oil
Pour vegetable oil into a heavy skillet (cast iron preferred) to a depth of about 1/2 inch. Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour — it should sizzle immediately and start browning slowly.
Dredge
While oil heats, whisk together flour, cornstarch, 1 tsp kosher salt, black pepper, garlic powder, onion powder, and smoked paprika in a shallow bowl. Remove chicken from buttermilk, letting excess drip off, then dredge each piece thoroughly in the seasoned flour mixture, pressing to form an even coating. Shake off excess.
Fry
Working in a single layer (do not overcrowd), carefully add chicken pieces to the hot oil skin-side down. Fry for about 6–8 minutes per side, adjusting heat to maintain ~325–350°F, until crust is deep golden-brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack set over a baking sheet to drain for 5 minutes.
Nashville Hot Glaze
While chicken rests, make the glaze. In a small saucepan or skillet over low heat, melt the unsalted butter with 1 tablespoon neutral oil. Stir in cayenne, smoked paprika, brown sugar, honey, 1/2 tsp apple cider vinegar, and 1/2 tsp kosher salt. Cook gently for 1–2 minutes to bloom the spices and dissolve the sugar; whisk until combined and glossy. Taste carefully and adjust heat/sweetness: add a pinch more cayenne for more fire or a touch more honey to tame it.
Brush & Toss: Using a pastry brush or spoon, generously brush the glaze over each fried chicken piece to coat the skin. For extra heat, spoon a little of the hot glaze into a shallow bowl and briefly toss the chicken to coat fully. Place glazed pieces back on the rack to set for 1–2 minutes.
Pickled Slaw & Assembly
Quick pickled slaw
In a bowl combine shredded cabbage, thinly sliced red onion, 2 tablespoons apple cider vinegar, 1/2 teaspoon sugar, and 1/4 teaspoon kosher salt. Toss and let sit for at least 10 minutes (up to 30 minutes). If you prefer a creamier slaw, stir in 1 teaspoon mayonnaise just before assembling.
Toast buns
Heat a skillet over medium heat. Spread 1 tablespoon salted butter across the cut sides of the buns and toast cut-side down in the skillet until golden and lightly crisp, about 1–2 minutes.
Assemble
Place one toasted bun bottom on a plate. Add a handful of pickled slaw, then the hot glazed chicken piece. Top the chicken with two dill pickle chips (or more to taste). Spoon any extra glaze over the chicken if desired. Place the bun top and press slightly. Repeat for the second sandwich.
