Sausage Patties

Mix sausage

In a medium bowl, combine the ground pork, kosher salt, black pepper, dried sage, brown sugar, and crushed red pepper (if using). Mix gently with your hands or a fork until just combined—do not overwork.

Form patties

Divide the mixture into two equal portions and shape each into a round patty about 3 to 3.5 inches in diameter and roughly 1/2 inch thick. Press a slight indentation in the center of each patty so they cook evenly.

Cook patties

Heat a large nonstick or cast-iron skillet over medium heat and add 1 tsp vegetable oil, swirling to coat. When the pan is hot (a drop of water sizzles), add the patties. Cook undisturbed 3 to 4 minutes until a deep golden-brown crust forms, then flip and cook 3 to 4 minutes more until internal temperature reaches 160°F (71°C). Transfer patties to a plate and keep warm.

Prepare eggs

Crack 2 large eggs into a small bowl, add 1 tablespoon milk, 1/4 tsp salt, and 1/8 tsp black pepper. Whisk until blended and slightly frothy.

Cook eggs

Wipe the skillet used for sausage or use a clean nonstick pan. Heat over medium-low and add 1 tsp butter, swirling until melted. Pour in the egg mixture. For folded/scrambled style: let eggs set for 10–15 seconds then gently push edges toward the center with a spatula, folding until just set but still moist, about 45–60 seconds. For an intact round egg (recommended for sandwich): oil a 3-inch ring mold or use a cleaned sausage ring, place in skillet, pour egg in, cover pan and cook 1.5–2 minutes until set through. Slide out and keep warm.

Toast muffins

Split the English muffins and spread 1/2 tbs softened butter on each cut side. Toast in a skillet or toaster oven until golden and lightly crisp, about 2–3 minutes per side in a skillet or 3–4 minutes in a toaster oven.

Assemble sandwiches

Place one cooked sausage patty on the bottom half of each toasted muffin. Top each patty with one slice of American cheese while the patty is still hot so the cheese softens. Place the cooked egg on top of the cheese. Cap with the muffin top. Press gently for 5–10 seconds to help cheese melt and sandwich settle.

Serve

Serve immediately while hot. Optionally wrap in parchment or foil for take-away.
