Prep the chicken

Pat chicken pieces dry with paper towels. Cut any larger pieces so all pieces are roughly 1/2-inch for even cooking.

Marinate

Place chicken pieces in a bowl and pour buttermilk over them. Add hot sauce if using and stir to coat. Cover and refrigerate for at least 30 minutes (up to 4 hours). This tenderizes and flavors the chicken.

Make the dry mix

In a shallow bowl or wide plate combine flour, cornstarch, breadcrumbs, salt, black pepper, garlic powder, paprika, and onion powder. Whisk to combine and break up any lumps so the coating is uniform.

Prepare the egg wash

Crack the eggs into a second shallow bowl and beat lightly until smooth.

Coat the chicken

Working in batches, remove chicken from buttermilk, letting excess drip off. First toss pieces in the dry mix to lightly coat, then dip into the beaten eggs, and finally return to the dry mix pressing gently so breadcrumbs adhere. Place coated pieces on a wire rack while you finish coating.

Heat oil

Pour oil into a medium heavy skillet or Dutch oven to a depth of about 1 to 1 1/2 inches (about 1.5–2 cups depending on pan). Heat over medium-high until oil reaches 350°F (175°C) or a piece of bread sizzles and browns in about 30–45 seconds. Maintain temperature between 330–350°F while frying.

Fry

Fry chicken in small batches (do not overcrowd) for 2.5–4 minutes per batch, turning occasionally, until golden brown and internal temperature reaches 165°F (74°C). Smaller pieces will cook faster; adjust time accordingly. Use a slotted spoon to transfer cooked popcorn chicken to a paper towel–lined baking sheet or wire rack to drain.

Keep warm

If making multiple batches, keep finished pieces in a single layer on a baking sheet in a 200°F (95°C) oven to stay warm and crisp while finishing remaining batches.

Finish and serve

Sprinkle chopped parsley over the popcorn chicken if using. Serve immediately with ketchup, honey, ranch, or your preferred dipping sauces and lemon wedges.

Honey ketchup: mix 1/2 cup ketchup with 2 tbs honey until smooth. Ranch: serve straight from the bottle or bowl. Arrange sauces in small cups for kids.

Garnish / Serving

Place popcorn chicken on a platter or kids' plate with dipping cups. Add lemon wedges on the side and sprinkle parsley over the chicken for color.
