Prep
Crack the 6 eggs into a medium bowl. Add 3 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk until combined and slightly frothy. Grate or shred the cheddar cheese and set aside. If using cooked sausage or bacon, chop into bite-size pieces and set aside.
Cook aromatics (optional)
Heat a nonstick skillet over medium heat. Add 1 tablespoon diced onion and cook, stirring, for 1–2 minutes until translucent. If you prefer no onion, skip this step.
Scramble eggs
Reduce heat to medium-low and add 1 tablespoon unsalted butter to the skillet. Pour the egg mixture into the pan. Let eggs sit undisturbed 10–15 seconds until edges begin to set, then gently push cooked portions from edges to center with a spatula, folding until large soft curds form. Remove pan from heat while eggs are slightly underdone — they will finish cooking in residual heat. This should take 2–3 minutes.
Finish filling
Stir in 1/2 to 3/4 cup shredded cheddar while eggs are still warm so it melts into the scramble. Add the chopped cooked sausage or bacon if using and fold to combine. Taste and adjust seasoning with a pinch more salt or pepper if needed.

Warm tortillas
Warm 4 large flour tortillas to make them pliable: heat in a dry skillet over medium for 10–15 seconds per side or microwave one tortilla at a time covered with a damp paper towel for 15–20 seconds. Lightly brush or spray each tortilla with a little cooking oil if you want a slightly crisp outside when toasting.
Assemble burritos
Place a warmed tortilla on a flat surface. Spoon about 1/4 of the scrambled egg and cheese mixture down the center (roughly 3/4 to 1 cup per tortilla). Add 2 tablespoons salsa or hot sauce if using and sprinkle 1/2 tablespoon chopped cilantro if desired. Fold the sides in, then roll from one end to the other, tucking as you go to make a firm burrito.
Toast (optional)
For a sealed, lightly crispy burrito, heat a clean skillet over medium and lightly oil or spray it. Place the seam side down and toast 1–2 minutes until golden, then flip and toast the other side 1–2 minutes. Press gently with a spatula to seal.
Serve
Cut burritos in half if desired and serve immediately with extra salsa or hot sauce on the side.
