Preheat and mix dry

Preheat your waffle iron according to manufacturer instructions. In a large bowl whisk together the flour, 2 tablespoons granulated sugar, baking powder, and salt until evenly combined.

Combine wet

In a separate bowl whisk the egg, milk, melted butter, and 1 teaspoon vanilla until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few small lumps are fine. Let the batter rest 5 minutes while the waffle iron finishes heating.

Brush or spray the waffle iron with butter or nonstick spray. Cook waffles according to your waffle iron’s instructions (usually 3–5 minutes) until golden and crisp. Transfer cooked waffles to a wire rack in a warm oven (about 200°F / 95°C) to keep crisp while you finish remaining components.

Prepare filling

In a medium bowl, beat the softened cream cheese with a hand mixer or whisk until smooth and free of lumps. Add the powdered sugar, Greek yogurt (or sour cream), lemon zest, and 1/2 teaspoon vanilla. Beat or whisk until the mixture is creamy and spreadable. Taste and adjust sweetness or lemon as desired.

Transfer filling to a piping bag or bowl. If piping, use a wide tip for neat presentation. Keep refrigerated until ready to assemble; it will firm slightly as it chills.

Cook berries

Place the 2 cups mixed berries, 2 tablespoons granulated sugar, and 1 tablespoon lemon juice in a small saucepan over medium heat. Cook, stirring occasionally, until the berries begin to release their juices and the mixture comes to a gentle simmer, about 5–7 minutes.

Thicken sauce

Mix the cornstarch with the cold water to make a slurry. Stir the slurry into the simmering berries and cook 1–2 more minutes until the sauce thickens slightly. Remove from heat and let cool for a few minutes. The sauce will thicken more as it cools. For a smoother sauce, press through a fine-mesh sieve to remove seeds, or leave as-is for rustic texture.

Keep the berry sauce warm or at room temperature for assembly.

Plate waffles

Place one warm waffle on each serving plate (recipe yields 4 waffles / servings; see servings). If making stacked waffles, you may use two per serving.

Add cheesecake topping

Spoon or pipe 2 tablespoons of the cheesecake filling onto each waffle and gently spread to create a small round of creamy cheesecake layer in the center of the waffle.

Top with berry sauce

Spoon 3–4 tablespoons of the mixed berry sauce over the cheesecake layer, allowing some sauce to run into the waffle pockets. Add a few fresh berries if using for brightness and texture.

Dust each waffle lightly with powdered sugar and, if desired, drizzle with 1/2 tablespoon maple syrup. Serve immediately while waffles are warm and filling is cool for a pleasing contrast.
