Lemonade

Method

Lemonade

1

Make simple lemon base

In a pitcher, combine 1 cup freshly squeezed lemon juice and 3 tablespoons sugar. Stir vigorously until the sugar dissolves fully. If you prefer a smoother result, warm 2 tablespoons of the cold water, dissolve the sugar in the warm water, then add to the pitcher and cool before continuing.

2

Finish lemonade

Add 3 cups cold water to the lemon-sugar mixture and stir to combine. Taste and adjust: add more water if too tart, or up to 1 more tablespoon sugar if too sharp. If using, stir in 1 teaspoon lemon zest for extra aroma. Chill or add 2 cups of ice cubes to cool immediately.

3

Serve

Fill serving glasses with ice and pour lemonade, leaving room at the top (about 1 inch / 2–3 cm) for the lemon drop cream float.

Lemon Drop Cream

4

Prepare glass rim (optional)

If you want a sugared rim, rub a lemon wedge around the outer rim of each glass, then dip the rim into confectioners' sugar spread on a small plate. Allow to set briefly.

5

Make lemon drop cream mixture

In a small mixing cup or shaker, combine 3 teaspoons vodka, 1 teaspoon triple sec (if using), 1 teaspoon simple syrup, 1 teaspoon vanilla extract, and 1 ounce heavy cream or half-and-half. Shake vigorously for 10–15 seconds (or whisk until slightly frothy) so the cream emulsifies with the spirits and becomes lightly aerated.

6

Float cream on lemonade

Gently spoon or pour the shaken cream mixture over the back of a spoon held just above the lemonade surface so it floats as a creamy layer. The cream will form a soft cloud on top of the lemonade. Use roughly the stated quantity to make a single float; scale up for multiple servings.

7

Garnish and balance

Finish with a lemon slice or twist on the rim. Taste: if the cream is too strong, add a splash more lemonade; if too weak, increase vodka by 1 teaspoon next time. Serve immediately with a straw and small spoon so guests can stir the cream into the lemonade if desired.
