Prepare and parboil potatoes

Wash the russet potatoes well and cut into 1/2- to 3/4-inch thick wedges or rounds (aim for uniform size so they cook evenly). Place potatoes in a large pot and cover with cold water by 1 inch. Add coarse salt. Bring to a boil over high heat, then reduce to a simmer. Cook until just tender when pierced with a fork but not falling apart, about 7–10 minutes depending on size. Drain in a colander and let steam-dry for 5 minutes.

When cool enough to handle, pat the potatoes dry thoroughly with kitchen towels or paper towels. Removing surface moisture ensures the batter will adhere and oil won't splatter.

Make the dry mix

In a medium bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika until evenly combined.

Add beer and chill

Gradually pour the cold beer into the dry mix while whisking to form a smooth batter. Add a few ice cubes to keep the batter very cold (this helps create a light, crispy coating). Batter should be thick enough to coat the back of a spoon but still fluid — add up to 2 tablespoons additional flour if too thin, or a splash more beer if too thick. Keep the batter in the refrigerator while you heat the oil (or place bowl over an ice bath).

Heat oil

Pour neutral oil into a large heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (roughly 1.5 L will be needed for a medium pot). Attach a deep-fry thermometer and heat oil to 350°F (175°C). Maintain temperature between 340–360°F (170–182°C) during frying.

Batter and fry the potatoes

Working in small batches (4–6 pieces depending on pot size so you don’t lower the oil temperature too much), dip each dried potato wedge into the cold beer batter, fully coating it. Allow excess batter to drip off for 5–10 seconds. Carefully lower the battered potatoes into hot oil, spacing them so they don’t touch. Fry until golden brown and crisp, about 4–6 minutes per batch, turning once halfway through. Use a slotted spoon or spider to transfer cooked potatoes to a wire rack set over a sheet pan or to paper towels to drain. If the oven is on, keep finished batches warm at 200°F (95°C) on the rack while you finish frying the rest.

Season and serve

While still hot, sprinkle the fried potatoes with finishing salt and chopped parsley if using. Serve immediately with lemon wedges on the side and your choice of dipping sauces (ketchup, aioli, or beer mustard).
