Toast muffins and warm bacon

Preheat oven to 350°F (175°C) if you prefer keeping sandwiches warm in the oven. Split English muffins or rolls and place cut sides up on a baking sheet. Toast in a toaster or under the broiler for 1–2 minutes until lightly golden (watch carefully). If bacon is not yet cooked, lay strips on a baking sheet and bake at 400°F (205°C) for 12–20 minutes until crisp, or pan-fry over medium heat 6–10 minutes, turning occasionally. Drain cooked bacon on paper towels.

Butter the muffins

Spread about 1/2 teaspoon of unsalted butter on each muffin half (reserve remaining butter for cooking eggs) while toasted so it melts in and keeps the sandwich base moist.

Mix eggs

Crack 8 large eggs into a medium bowl. Add 2 tablespoons milk or water, 1 teaspoon salt and 1 teaspoon black pepper. Whisk until combined and slightly frothy — this yields a tender folded egg texture.

Cook eggs (pan-scrambled / folded style)

Heat a nonstick skillet over medium-low and add 1 teaspoon vegetable oil plus 1 tablespoon unsalted butter. When butter is melted and sizzling lightly, pour the egg mixture into the pan. Let eggs set for 10–15 seconds, then use a silicone spatula to gently pull the eggs from the edges toward the center, creating large soft curds. Continue folding slowly for 2–3 minutes until eggs are mostly set but still moist — avoid overcooking. Remove from heat; residual heat will finish them.

Portion eggs

Divide cooked eggs into four equal portions, placing each portion on the bottom half of a toasted muffin.

Assemble sandwiches

Layer cheese and bacon

Top each egg portion with one cheddar cheese slice (fold slice if necessary to fit). Place 3 bacon strips over the cheese on each sandwich. If you like the cheese melted more fully, return assembled open sandwiches to the oven at 350°F (175°C) for 2–3 minutes or cover skillet briefly so the cheese melts.

Finish and serve

Place the top muffin halves over the bacon. If desired, brush the outside of the top and bottom muffins with remaining melted butter and griddle quickly in a skillet over medium heat 30–45 seconds per side to lightly crisp the exterior. Garnish with chopped chives or a few drops of hot sauce to taste. Serve hot.
