Preparation
Marinate the Chicken
In a bowl, combine the chicken breast and soy sauce. Let it marinate for at least 30 minutes to enhance the flavor.
Prepare the Vegetables
Wash and slice the zucchini, carrots, and bell pepper into thin strips. Set them aside.
Cooking
Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 7-10 minutes. Remove the chicken from the skillet and set aside.
Sauté the Vegetables

Return the cooked chicken to the skillet with the vegetables. Add chopped green onions and sesame seeds. Stir everything together and cook for an additional 2-3 minutes. Serve over cooked rice.
