    Inspect & Dry

    Place shucked oysters in a single layer on paper towels. Gently pat the tops and undersides dry to remove excess liquid. Too much surface moisture will prevent the coating from adhering and will splatter when frying.

    Season oysters lightly with 1 tsp fine sea salt and 1/2 tsp freshly ground black pepper. Set aside on a plate while you assemble the breading station.

Breading Station

    Set up three shallow bowls or rimmed plates: Bowl 1 (dry flour mixture), Bowl 2 (wet), Bowl 3 (breadcrumbs).

    In Bowl 1 combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp salt, 1 tsp paprika, 1/2 tsp garlic powder, and 1/4 tsp cayenne pepper. Whisk to blend. The cornstarch helps crisp the crust.

    In Bowl 2 whisk together 2 large eggs and 1/2 cup buttermilk until homogenous.

    Place 1.5 cups panko breadcrumbs in Bowl 3. If you want extra flavor, you can fold in 1 tbsp finely grated parmesan or 1/2 tsp lemon zest here (optional).

    Working in batches of 6-8 oysters to avoid crowding, dredge each oyster first in the flour mixture, shaking off excess; then dip into the egg-buttermilk mixture, letting excess drip back to the bowl; then press into the panko breadcrumbs to coat thoroughly. Place coated oysters on a wire rack set over a baking sheet. This keeps them from sitting in crumbs.

    If you prefer a thicker, extra-crispy double coat: after the first breadcrumb coat, return oysters to the wet bowl then to the panko again for a second coating.

Frying

    Pour 4 cups neutral oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1 to 1 1/2 inches. Heat over medium-high until the oil reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small breadcrumb — it should sizzle and turn golden in about 30–45 seconds.

    Pat the breaded oysters once more with a paper towel if they feel very moist. Gently lower 6–8 oysters into the hot oil, spacing them so they don't touch. Do not overcrowd the pan; overcrowding lowers the oil temperature and yields soggy crusts.

    Fry each batch for 1.5–2.5 minutes, turning once with tongs halfway through, until the crust is deep golden brown and the oysters are just set. Small/medium oysters cook fast; avoid overcooking to prevent toughening.

    Use a slotted spoon or spider to transfer fried oysters to a wire rack set over a baking sheet or to paper towels to drain. Sprinkle immediately with a light pinch of salt if desired.

    Allow oil to return to 350°F between batches before adding the next set of oysters. Repeat until all oysters are cooked.

Sauce (optional)

    While oysters fry or just before serving, whisk together 1/2 cup mayonnaise, 1 tbsp hot sauce, 1 tsp Dijon mustard, and 1 tsp lemon juice in a small bowl. Taste and adjust heat with additional hot sauce to taste. Chill until ready to serve.

    Arrange fried oysters on a serving platter or individual plates. Sprinkle with 2 tbsp chopped parsley and serve with lemon wedges and the prepared sauce on the side.
