Method

Prepare and salt eggplant

    Trim and slice

    Trim the stem of the eggplant and slice into 1/2-inch rounds or 3/4-inch cubes depending on preference (rounds for grilling/roasting, cubes for sautéing).

    Optional salting to remove bitterness

    Lay slices or cubes in a colander, sprinkle evenly with 1/2 teaspoon of the salt, let sit 20–30 minutes, then rinse under cold water and pat dry with paper towels. This step mellows bitterness and reduces moisture for crisper texture.

Cook eggplant

    Heat oil

    Heat 2 tablespoons olive oil in a large skillet over medium heat until shimmering.

    Sauté onion and garlic

    Add the chopped onion and cook, stirring, 4–5 minutes until translucent. Add the minced garlic and cook 30–60 seconds until fragrant, taking care not to burn it.

    Cook eggplant

    Add the eggplant pieces in a single layer as much as the pan allows (work in batches if needed). Cook without moving for 3–4 minutes until golden, then stir and continue cooking 6–8 minutes until soft and browned. Add the remaining 1 tablespoon olive oil if the pan is dry.

    Add tomato and simmer

    Stir in the diced tomato (or crushed tomatoes), 1/2 teaspoon salt (part of the 1 tsp), black pepper and red pepper flakes if using. Reduce heat to low and simmer 8–10 minutes until flavors meld and the mixture thickens slightly.

Finish and serve

    Stir in lemon juice and chopped basil, taste and adjust seasoning with remaining salt and pepper. If using, sprinkle crumbled feta or grated Parmesan and drizzle with extra virgin olive oil.

    Serve warm over toasted bread as a bruschetta-like topping, alongside rice, or as a side dish. Garnish with extra basil leaves.
