Base Beer

Chill beer
Place 4 cups of light wheat beer or Berliner Weisse in the refrigerator until well chilled (about 1–2 hours). Cold beer preserves carbonation and gives a bright presentation.
Fruit Syrup / Fruit Puree

Prepare citrus
Zest 1–2 lemons and 1–2 limes to yield 1 tablespoon each of lemon and lime zest. Halve and juice lemons and limes until you have about 3/4 cup lemon juice and 1/2 cup lime juice. Strain the juice through a fine mesh to remove pulp and seeds.

Make simple citrus syrup
In a small saucepan combine 1/2 cup granulated sugar and 1/4 cup water. Heat gently over low-medium heat, stirring until sugar dissolves (about 2–3 minutes). Do not boil vigorously. Remove from heat and stir in the lemon and lime zest. Let steep for 5 minutes to extract oils.

Finish syrup
Add strained lemon and lime juice to the warm syrup and stir to combine. Taste and, if desired, strain again to remove zest fragments. Allow syrup to cool to room temperature (about 15–20 minutes). This yields a bright, balanced citrus syrup/puree.

Adjust tartness
Once the citrus syrup is cooled, stir in 2 tsp lactic acid (or an equivalent citric acid solution) and a pinch of sea salt. Mix thoroughly and taste. The lactic/citric acid adds a controlled souring note—adjust by up to +/- 1 tsp to reach the desired sour intensity, but add in small increments and taste between additions.

Combine beer and syrup
In a pitcher, gently combine the chilled beer (4 cups) and the cooled citrus syrup mixture. Stir once or twice gently to incorporate—the goal is to maintain as much carbonation as possible while fully mixing the syrup into the beer.

Optional lighten with soda water
If you prefer a lighter mouthfeel or more effervescence, stir in 1/2 cup chilled soda water. This will increase fizz and slightly dilute intensity—taste and adjust.

Serve
Fill four serving glasses with 1 ice cube each if desired. Pour the beer mixture evenly into four glasses. Garnish each glass with a lemon or lime wheel and a sprig of mint if using. Serve immediately to preserve carbonation and fresh citrus aromatics.
