Prepare Glass & Mixers

    Chill and combine citrus and syrup

    Place the serving glass in the freezer for 5 minutes or fill it with ice water to chill while you prepare the rest. In a small measuring cup or mixing glass, combine fresh lemon juice (2 tbs), fresh orange juice (1 tbs), and 1 teaspoon simple syrup. Stir for 10 seconds to dissolve and integrate.

    Add bitters (optional)

    If using aromatic bitters, add 2 dashes to the citrus-syrup mixture and stir another 5 seconds. Taste briefly — the bitters should add a light complexity, not dominate.

Assemble Drink

    Prepare glass

    Discard the ice water from the serving glass (or remove from freezer). Fill the chilled glass with about 1 cup of fresh ice cubes to keep the beer cool without diluting it immediately.

    Add citrus mixture

    Pour the citrus-syrup-bitters mixture over the ice in the glass, distributing it evenly across the bottom.

    Pour beer

    Hold the glass at a slight angle (about 45 degrees) and slowly pour 4 cups of pale ale down the side to reduce excessive foam. As the glass fills, gradually straighten it and finish with a slow central pour to form a 1/2-inch head. If foam becomes excessive, pause and allow it to settle before continuing.

    Use a long bar spoon or stirrer to gently lift and stir no more than 3 turns — you want a light integration of citrus and syrup with the beer, not a full agitation that flattens carbonation.
