Cocktail

Method

Cocktail

  1. 1

    Build and chill

Add 2 oz Nikka From The Barrel, 0.75 oz sweet vermouth, 0.5 oz apple liqueur (or Calvados), 0.25 oz allspice dram, 2 dashes orange bitters, 1 dash Angostura bitters, and 0.25 oz simple syrup into a mixing glass.

  2. 2

    Stir

Fill the mixing glass with plenty of ice and stir briskly for 20–30 seconds until the mixture is well chilled (surface beads and the glass is frosty). This dilutes and integrates the sweet and spicy elements.

  3. 3

    Strain

Using a julep or Hawthorne strainer, double-strain into a chilled old-fashioned glass over one large ice cube (or a few large ice cubes) to keep temperature steady without over-dilution.

Garnish & Finish

  1. 4

Express the oils of the orange peel over the drink by holding the peel skin-side down 2–3 inches above the surface and giving it a sharp fold or squeeze so the oils spray onto the cocktail. Rub the peel around the glass rim and drop it into the drink.

  2. 5

Optionally grate a tiny pinch of fresh nutmeg over the top for a warm, spicy aroma that complements the allspice dram.

  3. 6

Serve immediately. Sip slowly to enjoy the balance of Nikka's robust, spicy-sweet character against the rounded sweetness of vermouth and apple notes.
