Method
Iced Oysters
Prepare the Oysters
Place the fresh oysters on a platter. Ensure they are properly cleaned and shucked.
Create an Ice Bed
Fill a large bowl or platter with ice. Arrange the oysters on top of the ice to keep them chilled.
Coconut Nuoc Cham
Combine Ingredients
In a bowl, mix the coconut milk, fish sauce, lime juice, sugar, chili flakes, and minced garlic together until the sugar dissolves.
Taste and Adjust
Taste the sauce and adjust the flavors if necessary, adding more lime juice for acidity or sugar for sweetness.
Mango Aji Amarillo Sorbet
Blend the Sorbet Ingredients
In a blender, combine the diced mango, aji amarillo paste, lime juice, sugar, and water. Blend until smooth.
Freeze the Mixture
Pour the mixture into a shallow container and freeze for at least 4 hours, stirring every hour to break up ice crystals.
