Prepare the potato mixture

Peel and grate the potatoes. Squeeze out excess moisture using a clean cloth. Finely chop the onion and mix it with the grated potatoes. In a bowl, combine the potatoes, onions, flour, eggs, salt, and pepper to form a batter.

Cook the pancakes

Heat vegetable oil in a large skillet over medium heat. Once hot, drop spoonfuls of the potato mixture into the skillet and flatten them into pancakes. Cook for 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Arrange the potato pancakes on a platter. Serve with sides of crème fraiche, smoked salmon, smoked trout, caviar, capers, and red onions for guests to build their own.
