Method

Prepare the Calamari

Clean and Prepare

If not pre-cleaned, clean the calamari by removing the innards and skin, then cut into rings.

Coat the Calamari

In a mixing bowl, combine flour, cornstarch, salt, and black pepper. Dredge the calamari rings in the mixture until evenly coated.

Fry the Calamari

Heat Oil

In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Calamari

Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Prepare Roasted Pepper Coulis

Roast Peppers

Preheat the oven to 450°F (230°C). Place whole red bell peppers on a baking sheet and roast for about 20-25 minutes, turning occasionally, until charred.

Blend Coulis

Let the peppers cool, then peel off the skin, remove seeds, and blend with garlic, olive oil, balsamic vinegar, salt, and pepper until smooth.

Plate the Dish

Serve the fried calamari with a drizzle of roasted pepper coulis, garnished with fresh parsley and lemon wedges.
