Method

Prepare the Avocado Mousse

Make the Mousse

In a blender, combine ripe avocados, lime juice, garlic, and salt. Blend until smooth and creamy. Adjust seasoning if necessary. Set aside.

Prepare the Warm Corn Tomato Relish

Cook the Relish

In a skillet over medium heat, add olive oil. Once hot, add red onion and sauté until soft. Add corn kernels and cherry tomatoes. Season with salt and pepper. Cook for about 5 minutes until heated through. Set aside.

Prepare the Crispy Prosciutto

Crisp the Prosciutto

Preheat the oven to 400°F (200°C). Lay prosciutto slices on a baking sheet and bake for 10-12 minutes until crispy. Remove and let cool.

Cook the Scallops

Sear the Scallops

Heat olive oil in a large skillet over high heat. Season scallops with salt and black pepper. Sear scallops for 2-3 minutes on each side until golden brown and cooked through. Remove from heat.

Plate the Dish

Assemble the Dish

On each plate, spread a generous dollop of avocado mousse. Top with seared scallops, spoon warm corn tomato relish over the top, and garnish with crispy prosciutto.
