Method

Preparation

1

Prepare the Seafood

In a large pot, bring salted water to a boil. Add shrimp and cook for 2-3 minutes until pink and opaque. Remove and place in ice water to chill. For lobster, steam for about 5-7 minutes, then chill in ice water. If using frozen crab legs, thaw them in the refrigerator overnight, then serve cold. Scallops should be seared quickly in a hot pan for 1-2 minutes on each side before chilling.

2

Shuck Oysters and Clams

Carefully shuck the oysters and clams, placing them on a serving platter with ice to keep them chilled.

Assembly

3

Plate the Seafood

On a large platter, arrange the chilled shrimp, lobster, crab, scallops, oysters, and clams. Ensure that the seafood is displayed attractively.

4

Serve with Sauces

Place bowls of cocktail sauce, garlic butter sauce, and mignonette sauce in the center of the platter. Garnish with lemon wedges around the seafood for freshness.
