Prepare the Chicken

In a large pot, heat the herbal butter over medium heat. Add the chopped red onions and sauté until they are translucent and slightly caramelized, about 5-7 minutes.

Add Garlic and Spices

Stir in the minced garlic and berbere spice mix. Cook for an additional 2-3 minutes until fragrant.

Cook the Chicken

Add the chicken pieces to the pot, stirring to coat them in the onion and spice mixture. Cook for about 10 minutes, allowing the chicken to brown slightly.

Simmer the Stew

Pour in the water or chicken broth and season with salt. Bring to a boil, then reduce the heat to low. Cover and let simmer for 45 minutes to 1 hour, or until the chicken is tender and cooked through.

Prepare the Boiled Eggs

While the stew is simmering, boil the eggs in a separate pot for about 10-12 minutes. Once cooked, cool them under cold water, peel, and set aside.

Once the stew is done, serve it hot with boiled eggs on top and injera on the side.
