Preparing the Bacon-Wrapped Dates

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Dates
Make a slit in each Medjool date and remove the pit. If desired, stuff each date with an almond or a small piece of cheese.

Wrap with Bacon
Cut the bacon slices in half. Wrap each date with a half slice of bacon and secure it with a toothpick if necessary.

Bake the Dates
Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy.
Making the Red Pepper Coulis

Roast the Peppers
Char the red bell peppers over an open flame or under a broiler until the skins are blackened. Place them in a bowl and cover with plastic wrap to steam for 10 minutes.

Blend the Coulis
Peel the skins off the roasted peppers and remove the stems and seeds. In a blender, combine the roasted peppers, olive oil, garlic, red wine vinegar, salt, and black pepper. Blend until smooth.

Serve the bacon-wrapped dates hot, drizzled with the red pepper coulis.
