Cookie dough

Method

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.

In a medium mixing bowl whisk together flour, unsweetened cocoa powder, baking powder, and salt until evenly combined.

In a separate large bowl, cream the softened butter with granulated and brown sugars using an electric mixer on medium speed until light and fluffy, about 2–3 minutes.

Add the egg and vanilla extract to the butter-sugar mixture and beat until incorporated, scraping down the sides once.

Gradually add the dry ingredients to the wet ingredients and mix on low speed until a cohesive dough forms. Do not overmix—stop as soon as no streaks of flour remain.

Using a 1-tablespoon cookie scoop or a tablespoon, portion the dough into 24 rounded balls (about 12–14 g each). Place them 1 inch apart on the prepared baking sheet; they will spread a little.

Flatten each ball slightly with the palm of your hand or the bottom of a glass so they set with a slightly domed but flat-enough top for coating and assembly. This creates the base 'cookie pop' shape.

Bake for 9–11 minutes, until the edges are set but centers are still slightly soft. Rotate the pan halfway through if your oven runs unevenly.

Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Cooling fully is important so they don’t crumble when assembled.

Filling & assembly

Make the chocolate filling (simple ganache): place the 6 oz chopped milk chocolate or chips in a heatproof bowl. Heat the heavy cream until it just begins to simmer (microwave 30–40 seconds or stovetop), then pour over the chocolate. Let sit 1 minute, then stir until smooth and glossy. If too thick, warm gently or add 1 tsp more cream.

Line a small tray with parchment. Working with one cooled cookie at a time, dip the tip of a lollipop stick about 1/2 inch into melted chocolate ganache and insert into the bottom center of a cookie, pushing about halfway through the cookie so the stick is secure. Repeat for half the cookies first. Chill for 5–10 minutes to set.

Spread or pipe about 1 teaspoon of ganache onto the flat side of a second cookie, then sandwich it to the cookie with the stick so the stick is centered between the two cookies forming a pop. Press gently so ganache spreads to the edges and fills gaps. Repeat to assemble all cookie pops. Chill assembled pops for 10–15 minutes to firm the filling and stabilize them for coating.

Coating & decorating

Prepare coating: melt the green candy melts in a microwave-safe bowl in 20–30 second bursts, stirring between bursts, until smooth. If the consistency is too thick for dipping, stir in 1/4 tsp vegetable oil at a time until a smooth, slightly runny consistency is reached. Keep warm in short bursts; do not overheat.

Melt the white and black candy melts (in separate bowls) the same way in short bursts. Transfer melts to piping bags or small squeeze bottles (or use a small spoon) for detail work.

Hold a chilled assembled cookie pop by the stick and dip it straight down into the green coating, fully covering the cookies. Lift and let excess drip off, then gently tap the stick edge on the bowl to remove large drips. Place the coated pop upright in a styrofoam block, a stand, or on parchment to set. Repeat for all pops. If coating thickens, reheat briefly.

Before the coating sets fully (while still tacky), press two mini white candy melts or piped white circles where the eyes should be. Allow to set 30–60 seconds so they adhere.

Using the black candy melts in a piping bag or melted chocolate and a toothpick, pipe small pupils onto each white eye. Use mini chocolate chips for pupils if preferred (press into the white while tacky).

With black candy melts, pipe a small stitched mouth and a few short vertical stitch marks across it. For the classic Frankenstein look add two small round sugar pearls or sprinkles at the sides of the head where bolts would be.

Optional: use a darker green or a bit of cocoa-dusted shading near the forehead edges for extra dimension. Let all decorations fully set (about 20–30 minutes at room temperature or 10–15 minutes refrigerated).

Finishing & storage

Once set, trim any excess chocolate at the stick with scissors if needed and inspect each pop for secure attachment. Store in an airtight container in a single layer separated by parchment at room temperature up to 3 days or refrigerated up to 7 days. If refrigerated, bring to room temperature 15–30 minutes before serving for best texture.
