Prepare Vegan Chicken

Press and drain tofu

Wrap the extra-firm tofu block in a clean kitchen towel or paper towels. Place a cutting board or flat surface on top and weigh it down with cans or a heavy pan. Press for 20–30 minutes to remove excess moisture.

Crumble or slice base

After pressing, unwrap the tofu. For a chicken-cutlet style, slice the block into four slabs about 1/2 inch thick. Alternatively, for shredded pieces, crumble tofu with your hands or a fork into bite-sized shreds. If using seitan strips, tear or slice them to desired size and omit crumbling.

Marinate

In a shallow bowl combine 3 tbsp soy sauce, 2 tbsp vegan mayonnaise, 1 tbsp apple cider vinegar, 1 tsp maple syrup, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp ground black pepper and 1 tbsp oil. Whisk until smooth. Toss the tofu slabs or shredded pieces in the marinade, coating thoroughly. Let sit 10–15 minutes (or up to 1 hour in the fridge) to absorb flavor.

Optional quick sear (for texture)

Heat 1 tbsp vegetable oil in a non-stick skillet over medium-high heat. Sear the marinated slabs or strips 1–2 minutes per side until lightly browned. This step adds texture but is optional if frying or baking directly.

Breading and Frying / Baking

Make plant buttermilk

In a small bowl combine 1 cup unsweetened plant milk with 1 tsp apple cider vinegar. Stir and set aside 5 minutes to thicken.

Prepare breading stations

Station 1: In a shallow dish mix 1 cup flour, 1 tbs cornstarch, 1 tsp salt and 1/2 tsp black pepper. Station 2: In a second bowl whisk the plant buttermilk with 3 tbsp aquafaba, 2 tbsp ketchup and 1 tsp hot sauce (if using) to create a wet dip. Station 3: Place 1 cup breadcrumbs/panko in a third dish.

Dredge

Working one piece at a time, lightly coat tofu slabs/strips in the flour mixture, dip into the wet mixture ensuring full coverage, then press into the breadcrumbs until well coated. For extra crunch, repeat the wet-dry cycle for a double layer.

Fry (preferred crispy texture)

Pour oil into a heavy skillet or deep pan to a depth of about 1/4–1/2 inch (or use a fryer to 350°F/175°C). Heat over medium-high until shimmering. Fry breaded pieces in batches for 3–4 minutes per side, turning once, until golden brown and crisp. Transfer to a plate lined with paper towels and gently salt while hot.

Or bake (healthier option)

Preheat oven to 425°F (220°C). Place breaded pieces on a parchment-lined baking sheet and lightly brush or spray with oil. Bake 15–20 minutes, flipping halfway, until golden and crisp. For extra crispness, broil 1–2 minutes at the end while watching carefully.

Assemble Sandwiches

Toast buns

Warm a skillet over medium heat and spread 1/2 tsp vegan butter on each bun half. Toast cut sides 1–2 minutes until lightly golden. Alternatively, toast in oven or toaster.

Spread and layer

Spread about 1 tbsp vegan mayonnaise on the bottom half of each bun. Place one crispy vegan chicken piece on each bun. Top with 3–4 pickle slices, about 1/2 cup shredded lettuce per sandwich, and a tomato slice if desired. Spread additional mayonnaise on the top bun and close the sandwich.

Serve

Serve immediately so the crust stays crisp. Offer extra pickles, hot sauce, or ketchup on the side.
