Prepare bread

Lightly brush both sides of each bread slice with olive oil (or spread a thin layer of butter). This helps create a crisp, golden surface and prevents sogginess.

Toast the slices: place bread in a preheated skillet over medium heat, in a toaster, or under a broiler. Cook 2–3 minutes per side in a skillet until golden brown and crisp, or 3–4 minutes per side under a broiler, watching closely to avoid burning.

Remove toasted bread and keep warm on a plate. If using butter, rub one side lightly while still warm for extra flavor.

Avocado Spread

Halve and pit the avocados. Scoop flesh into a medium bowl.

Mash the avocado with a fork to a mostly-smooth but slightly chunky texture (or leave chunkier if preferred).

Add lemon juice, sea salt, black pepper, and red pepper flakes (if using). Mix well and taste; adjust salt, pepper, or lemon as needed.

If you want extra creaminess, stir in a teaspoon of olive oil or 1 tablespoon of yogurt. Keep the mixture at room temperature until ready to assemble.

Toppings & Garnish

Prepare toppings while bread toasts: halve cherry tomatoes, thinly slice radishes, and crumble cheese (if using). Chop herbs.

Assemble: spread about 2–3 tablespoons of avocado mixture evenly over each toasted slice (use all the avocado across the 4 slices).

Top each slice with halved cherry tomatoes (3 per slice), a few radish slices, a sprinkle of crumbled cheese (about 1 tbsp per slice if using), and a pinch of everything bagel seasoning.

Finish with a light squeeze of lemon wedge over each toast, a small pinch of flaky sea salt, and a scatter of chopped herbs.
